Old Ferry Donut Production is looking for a highly skilled and enthusiastic bakery professional to step into the role of Assistant Production Manager. This position plays a vital role in maintaining our commitment to high-quality artisanal donuts while supporting production efficiency and innovation. Ideal candidates will have deep bakery expertise, a passion for flavor development, and strong leadership skills to help oversee daily operations and drive product excellence.

Key Responsibilities

  • Quality Control & Standards Ensure all donuts meet our premium standards for texture, flavor, and consistency. Oversee dough preparation, ingredient selection, and overall product quality. Implement quality assurance measures to maintain freshness and uniformity in every batch.
  • Product Development & Innovation Collaborate on new donut flavors and recipes, integrating innovative techniques to enhance taste and presentation. Lead experimental baking sessions, testing new ingredients and seasonal flavors that align with brand identity.
  • Production Oversight & Workflow Optimization Assist in managing the day-to-day production schedule, ensuring efficiency and smooth operations. Maintain production timelines, monitor inventory levels, and coordinate supply orders to avoid disruptions. Engage in hands-on production for at least two days per week, helping maintain consistency across all baking processes.
  • Operational Support & Leadership Act as the Production Manager’s representative when needed, ensuring clear communication with the team and resolving any operational challenges. Support staff training efforts, mentoring team members to uphold best practices in baking, sanitation, and workplace efficiency.

Required Qualifications

  • Bakery Expertise Demonstrated experience in professional baking, particularly in bread-making and flavor development. Understanding of fermentation, dough handling, and pastry techniques.
  • Attention to Detail & Quality Commitment Ability to maintain high-quality standards in production, ensuring consistency in taste, texture, and appearance. Strong knowledge of food safety and sanitation regulations.
  • Problem-Solving & Leadership Skills Proactive approach to troubleshooting production issues and optimizing efficiency. Capable of leading a team, providing guidance, and ensuring collaboration in a fast-paced environment.
  • Adaptability & Teamwork Ability to work independently while fostering strong team dynamics. Enthusiastic about working with others to create a positive and productive bakery environment.
